By the time you get this and are able to use it all effectively (I.E GM alchemist, smith, and fisherman), you should qualify for the Vet skill bonuses, which will let you slowly gain a higher cap. To be on the safe side, once you start getting up in skill points, you can stop using parry until you qualify for the bonus.

you'll probably use poisoning so much that it'll boost up to 90...

just sit at around 70-75 resist

With GM parry you'll be fine if using a shield

And beware mace-fighting for PvM... you're better off with swords - there are only 2 mace weapons worth using - neither of which swings very fast...
